Zen Cat's Lazy Chicken Chili

Soldier is enjoying an all inclusive trip courtesy of Uncle Sam. He’ll be at “Fort Lost in the Woods” in Misery for a few weeks. Daredevil Princess and I like to enjoy healthy, quick and delicious meals when Soldier is away soldiering. I hate spending too much time in the kitchen during the summer months. Whipping up a meal takes less time than the 40-50 minutes it takes me to get some takeout. (What can I say? I live on the edge of the world, right before the horizon drops off into nothingness.) When I get low on supplies -because I’m too lazy to head into civilization for a few groceries- I come up with some really creative dishes. Like this yummy chicken chili. It serves two by itself or four people with a side of corn bread. (We went with the corn bread.)
Zen Cat’s Lazy Chicken Chili

1 large chicken breast diced
Chili powder
Paprika
1 medium sized onion diced
1 tsp garlic minced
1 14oz can of beans (I used black)
1 10oz can of Rotel Diced Tomato & Green Chilies
(Don’t throw away the liquid from the can of beans or tomatoes. We'll add that too.)
1 chicken bouillon cube
Cholula Hot Sauce Season diced chicken with paprika and chili powder. Put pan on medium to low heat. Spray with nonstick spray. Add diced chicken cook slowly. Add onions and garlic after cooking the chicken through. (Make sure the pan is not too hot so the onions and garlic won’t stick.) Add everything except the hot sauce. Simmer for 20 minutes. Add the hot sauce right five minutes before the chili is finished cooking.

The finished product is delish. I hope you try it out.

Milspouse Friday Fill-in



1. What is your spouse’s best feature?

I love a man with muscles and his body is amazing. It's really hard to pick one thing because it all comes together to make one hot male. If I had to choose I'd go with his arms. His arms are my favorite because he gives me the best hugs and he cuddles me with them when we watch TV or movies.

2. Mild, Medium or Hot sauce?

In the past I was a hot sauce kinda girl. Then I was introduced to Cholula sauce on vacation. It is mild but full of flavor.
3. What is the worst uniform you had to wear for a job?

I worked at a fast food joint when we had to wear khakis and a polo shirt. Flying grease and a hot kitchen made wearing that uniform shear torture. I hated it.

4. You have invisible powers… where is the first place you would go?

Gah, not gonna lie. The first thing I thought of was the Bucs locker room right before a game lol. Don’t judge me.

5. What’s left on your “to do” list for this summer?

Sigh, a lot of chores for one. We’ve accumulated so much junk. I have to go through everything and donate what I can. I’m also trying to fit in a few trips while I still can. We’re going to Disney World in two weeks, and then to Miami, hopefully New York and we’ll squeeze in a few trips to the beach.

Moment of Zen. (Brought to you by naked Zen Cat)

After waking up for the past few days with a stuffy nose and a fatal case of cotton mouth, I decided it was time to give the castle a deep cleaning. My allergies were acting up. Banishing all of the animal hair would keep me out of the hospital. I figured it was also time to clean the ink stains out of my white couches. (White couches + child + pets = bad idea) I opened the curtains so that I could look at the lake as I worked. I took off my pants and over-shirt so that they wouldn’t get wet. I pushed up my invisible sleeves and got down to business. Cleaning relaxes me and soon my mind began to drift. Suddenly Rocky started barking. I froze like a scared bunny faced with a crazed toddler. I needed to get dressed quick. I took a look outside and saw nothing. He started barking again, but try as I might I couldn’t discover what was disturbing his peace. All I could see was this…
